Cornmeal cooked slowly with water or milk, stirred until it thickens, polenta was the everyday food of northern Italy long before it reached restaurant menus.
Served soft and creamy, enriched with butter and parmesan, it is a bed for braises: Italian sausage in tomato sauce, chicken cacciatore, mushroom ragù, braised veal shank or shrimp. Polenta taragna, from Lombardy, mixes buckwheat into the corn and gets plenty of cheese. Left to set, polenta can be sliced and grilled or fried.
