Stirred for twenty minutes until the rice releases its starch, risotto is a northern Italian dish that tests the patience of the cook and rewards the eater.
It is made with short-grain rice such as arborio or carnaroli, toasted in butter, then cooked with ladles of hot broth and finished with more butter and parmesan. Risotto alla milanese is colored gold by saffron; mushroom and porcini versions are the most ordered; seafood and shrimp risottos skip the cheese; black risotto gets its color from squid ink. A good one should flow slightly on the plate.
Truffle, saffron and seafood raise the price. At the Italian places on SemFood, from $10.49 to $64.99.
