Long, ridged and rolled in cinnamon sugar while still hot, churros are the fried dough sticks that came from Spain to Mexico and then north to American theme parks and taquerias.
The dough is piped through a star-shaped nozzle, which gives the ridges that catch the sugar and keep the outside crisp. In Mexico they come with a cup of thick hot chocolate for dipping, or with cajeta, a caramel made from goat milk. Filled churros, piped with dulce de leche or chocolate, are a later invention. Some places finish them with smoked salt or ancho chili chocolate.
