Nachos were invented in a Mexican border town in the 1940s, when a cook fried tortilla wedges and covered them with cheese and jalapeños for a group of visitors.
Today the loaded version piles on beans, ground beef or chicken, cheese sauce, pico de gallo, sour cream and guacamole. The simpler cousin is the basket of fresh tortilla chips with salsa roja, salsa verde or guacamole, which at many taquerias is the opening act of every meal.
