Baked custard under a layer of liquid caramel is one of the oldest desserts of European cooking, and it reaches American menus under several names.
Crème caramel is the French version, made with milk, eggs and sugar and baked in a water bath until just set, then turned out of its mold. Leche asada, from Latin American kitchens, is baked without the mold and gets a toasted top. Coconut custard swaps part of the milk for coconut milk. The American pudding cup, thickened with cornstarch instead of eggs, is softer and comes in chocolate or vanilla.
