Dense, dark and slightly gooey in the center, the brownie is a chocolate bar cookie that has been part of American baking since the late nineteenth century.

There are two schools. Fudgy brownies use more butter and chocolate and less flour; cakey ones rise more and have a lighter crumb. The shiny crackled top comes from sugar whipped well with the eggs. Variations include pecan or walnut, a ribbon of salted caramel, vegan versions with oil instead of butter, and the brownie à la mode, served warm with a scoop of vanilla ice cream.
