A chocolate truffle is a ball of ganache (chocolate melted into cream) rolled in cocoa powder, named for its resemblance to the rare mushroom.
The French version is irregular and dusted in cocoa; others are dipped in a thin shell of tempered chocolate. Chocolatiers flavor the ganache with coffee, pink peppercorn, passion fruit, lemon or coconut. They are sold in small boxes of four or six and are a classic gift, or an add-on at the end of a dessert order.
