Chop suey is the dish that introduced Chinese cooking to America in the late nineteenth century, and it still appears on old-school takeout menus.
The name means mixed pieces, and the dish is just that: chicken, beef or shrimp stir-fried with bean sprouts, celery, bok choy, water chestnuts and snow peas in a light, glossy sauce thickened with cornstarch. Moo goo gai pan is a close relative, with sliced chicken and mushrooms in a white sauce. Both come with steamed rice.
