Crispy on the bottom and steamed on top, the potsticker is a Chinese dumpling that Japan adopted after World War II and renamed gyoza.
The filling is usually ground pork with cabbage, garlic, ginger and scallion, wrapped in a thin wheat skin. The cooking method gives the name: they are fried in a pan, then a splash of water is added and the lid goes on to steam them. Hanetsuki gyoza are joined by a lacy crisp skirt. Chinese kitchens also sell them boiled or steamed, with chili oil and black vinegar for dipping.
