Sushi went from an exotic novelty to a supermarket staple in the United States within a few decades, and delivery trays are now a common way to feed a table.
The base is vinegared rice paired with raw or cooked fish. Sushi trays and combos mix nigiri, maki rolls and inside-out rolls, sized by piece count, from a lunch box of 20 to a family tray of 40. Simple maki, with the seaweed on the outside, hold one or two fillings like cucumber, tuna or salmon. Fried rolls and crab stick versions are typical of American sushi bars.
