Rolled into a cone and eaten with the hands, the hand roll (temaki in Japanese) has to be eaten right away, before the seaweed loses its crunch.
That urgency created a whole style of American restaurant, the hand roll bar, where the chef passes each cone across the counter. The fillings are short and simple: spicy salmon or tuna, crab, shrimp tempura, negitoro (minced fatty tuna with scallion) and, at the top end, sea urchin. For delivery, some places pack the seaweed separately so it stays crisp until you roll.
