No rice, no seaweed, just the fish: sashimi is thinly sliced raw seafood served on its own, and it depends entirely on freshness and knife work.
Slices come in orders of five to eight, usually over shredded daikon with a shiso leaf, wasabi and soy sauce. Salmon and tuna are the most ordered; madai (sea bream), yellowtail, scallop and octopus are found at better bars. Modern Japanese places dress sashimi with ponzu, yuzu or chili, and Nikkei kitchens, which blend Japanese and Peruvian cooking, pour tiger milk over white fish.
