A small oval of rice pressed by hand and topped with a slice of fish, nigiri is the purest form of sushi and the one sushi chefs judge each other by.

In Japan a little wasabi goes between the rice and the fish, and the piece is dipped fish side down into soy sauce. American sushi bars sell nigiri in pairs: salmon and tuna (maguro) are the basics, followed by yellowtail, eel (unagi) brushed with a sweet sauce, cooked shrimp, octopus (tako) and scallop.
