Served at almost every Japanese meal, miso soup is the small cup that comes before or alongside the sushi, and in the United States it often rides along in the combo.
Its base is dashi, a broth made from kombu seaweed and dried bonito flakes, into which fermented soybean paste is whisked at the end, without boiling, to keep its aroma. The classic version has silken tofu cubes, wakame and scallions. Clam (asari) miso and red miso with fish are deeper and saltier. Suimono is the clear cousin, a light dashi with a few delicate pieces.
