Light, lacy and pale gold, tempura is a frying technique that Japan learned from Portuguese missionaries in the sixteenth century and turned into an art.
The batter is made with ice-cold water and barely mixed, so the gluten does not develop and the crust stays airy instead of bready. Shrimp (ebi) tempura is the favorite, followed by vegetable assortments of sweet potato, squash, eggplant, shiso and mushrooms. It comes with tentsuyu, a dipping sauce of dashi, soy and mirin, with grated daikon. Tempura loses crispness quickly, so good kitchens pack it vented.
