At Mexican and Cuban restaurants, the dessert menu almost always starts with flan, a baked custard turned out of its mold so the caramel runs down the sides.
The Mexican flan napolitano is made with condensed and evaporated milk plus cream cheese, which gives it a denser, richer texture than the French crème caramel. Coconut flan, cheese flan and chocolate flan are popular variations, and flan de cajeta swaps the caramel for goat milk caramel. Some places make the chocoflan, also called impossible cake, where chocolate cake and flan switch places in the oven.
Slice or whole flan and the flavor set the price. At the Mexican places on SemFood, from $3.99 to $16.99.
