The egg roll, thick and bubbly, filled with cabbage and pork, is a Chinese American creation and one of the first things people add to a takeout order.
It is different from the spring roll, which uses a thinner, smoother wrapper and fries up lighter and crisper; Japanese places call it harumaki. Fillings range from simple vegetables to shrimp, chicken, crab and roast duck. Sweet and sour sauce, hot mustard and sweet chili sauce are the usual dips. They are sold in twos, threes or fours, and mini versions come by the eight.
