Once a specialty of Middle Eastern restaurants, hummus is now in every American refrigerator, but the fresh version at a good Lebanese or Israeli place is a different thing.
It is cooked chickpeas blended with tahini, lemon juice, garlic and salt until silky, finished with a pool of olive oil and a pinch of paprika or cumin.
