Ground meat mixed with onion, parsley and spices, molded around a flat skewer and grilled over charcoal: kofta is cooked from the Balkans to India, with a different name in each language.
Lebanese kofta is usually beef or lamb with seven-spice blend; the Turkish Adana kebab is spicy, made with lamb and red pepper, and the Beyti kebab is wrapped in bread and topped with yogurt and tomato sauce.
