Lebanon considers kibbeh its national dish: a paste of fine bulgur and lean meat, pounded with onion and spices, shaped and cooked in many ways.
Fried kibbeh are football-shaped shells stuffed with ground meat, onion and pine nuts, crisp outside. Kibbeh bil saniyeh is baked in a tray, in layers, and cut into diamonds. Kibbeh nayyeh is served raw, like a tartare, with olive oil, mint and fresh onion, and is only made with very fresh meat. Turkish içli köfte is a close relative. Pumpkin and beetroot kibbeh are meatless versions.
