Folded into a sharp triangle and baked until golden, fatayer are the small closed pies of Lebanese and Syrian bakeries, made to be eaten in two or three bites.
The most famous filling is spinach with onion, sumac, lemon and pine nuts, sour and fresh. Cheese fatayer use akkawi or feta with parsley, and the boat-shaped open version is common too. Swiss chard and wild herbs are traditional in villages, and some places now make vegan versions with cashew labneh. They are sold by the piece or by the plate of several.
