Born in nineteenth century Russia and named after a noble family, beef stroganoff traveled across Europe and landed in American kitchens in the 1950s as a weeknight dinner party dish.
The classic is strips of beef sautéed quickly with onions and mushrooms, finished with sour cream and a touch of mustard. In the United States it is usually served over egg noodles; elsewhere, over rice or with fries. Lighter versions use chicken, and vegetarian ones rely on wild mushrooms or hearts of palm. Shrimp stroganoff is a richer variation.
