Thick, tangy and spreadable, labneh is yogurt that has been strained in cloth for a day or more until it reaches the texture of cream cheese.
It is a breakfast staple in the Levant, served in a shallow bowl with olive oil, za'atar or dried mint and a basket of bread, cucumbers, olives and tomatoes. Rolled into balls and kept in olive oil, it lasts for weeks. Turkish kitchens mix strained yogurt with cucumber and garlic into a dip close to cacık. Vegan versions use cashews.
